
Lyophilized truffles are an alternative to fresh truffles out of season. Freeze-drying differs from other dehydration methods in that the flavors, smells, and nutritional content remain unchanged. Lyophilized truffles can be rehydrated and made ready for use. PREPARATION: Take some lyophilized truffles out of the jar and add them to the pot. Pour 0.05 l of water over lyophilized truffles. Leave them in the water for a minute. Arrange the truffles on top of the bowl. Recommendation: Truffle water can be used as a sauce.
